On Wednesday, I went over to my Aunt Pam's house to pick up some pictures that she enlarged for us. While I was there she gave me some corn. I was only expecting to get 3-4 cobs but she gave us two bags full! I was so excited! I knew that I couldn't eat it all before it would go bad, so when I got home, I expressed my desire (to all that where staying at our house) to cook it and freeze it.
Yesterday morning, I was talking with my in-laws and I realized that I didn't really have a big enough pot. In the past, when I cooked corn I had to break the cob in half first. So I reasoned that I would just have to go get a bigger pot after work that day.
When I got home, MIL and FIL had a little surprise for me! Hurray, a new pot!
(They also got me this really cute 'fall' table runner!)
They even helped me with all my corn! First, we put the corn in a sink full of warm water and washed them off. Then we brought water to a rolling boil... in the nice new pot! Then we put the corn cobs in and waited for it to come to a boil again, then set the timer for 6 minutes. When the timer went off we put the cobs in the sink filled with cold water.
Now for the fun part. We sliced off all the corn.

MIL was having a great time!
I had a great time too. I love corn so much, it's was so hard keeping it out of my mouth!
Then we wrote the year on the plastic zip-lock bags, and put 1 cup in each bag. We figured it is only Briant and I that will be eating it, therefore we made small portions so we wouldn't waste it.
FIL bagging:
We started with 29 cobs and ended up with 18 bags! That should last us a while. Mmm, nothing like homegrown corn in the middle of January!
Into the freezer with them! This was a great excuse to finally organize our freezer.
And last, and most definitly the least fun part... dishes.

Thanks Pam, for all the corn! I love corn!
Thanks Mom, for telling me step by step instructions!
Thanks MIL and FIL for all your help and encouragement!
Can't wait to eat it all! YUM!

That was super nice of them to do that for you. I am going to be canning tomorrow so this helped put me in the mood.
Isn't it great!!! Here's a shortcut for you....
We used to scald all the corn before bagging and freezing it...then we found out you don't have to. We have been just washing the corn, cutting it, and bagging it for years and it's fabulous!!
We used a electric knife and it was seriously so fast and it was nice b/c you can control how much you cut off.
